Maturation

80% of our annual production will be filled into fresh bourbon barrels from Buffalo Trace Distillery, Kentucky and 20% into fresh oloroso sherry butts.

A small number of 30 litre ex wine barrels will be filled and when mature, customers visiting the shop will be able to fill their own bottles.

Casks will be stored in a bonded warehouse at the distillery
