Our distilling programme is as follows:

Mash Size 1 tonne
Water 3 (1st – 4,000 litres @ 66C, 2nd – 1700 litres @80c, 3rd – 4000 @90C)
Washbacks 4 stainless steel (5,300 litres each)
Yeast Variety Mauri Distillers Yeast
Fermentation Time Average of 100 hours
Wash Still Charged with 2700 litres
Spirit Still Charged with 1500 litres

 

Weekly Distilling Programme

Floor Maltings 2 tonnes
Mashes 6 x 1 tonne
Distillation Runs 12
Casks Filled 18 per week (barrels)

 

Annual Production – 90,000 litres of alcohol (approx. 630 bourbon barrels and 40 sherry butts)
